P28 Banana Bread Pudding

Ingredients Needed:

  • 1 slice P28 High Protein Bread
  • 1/2 small banana (diced)
  • 1 egg, beaten
  • 1/4 cup milk (I used unsweetened almond milk)
  • 1 T pumpkin puree
  • 1/2 T chopped walnuts
  • 1/2 tsp cinnamon 
  • (optional) sweetener to taste (I used 1 packet of stevia)


  • Preheat oven to 375. 
  • Cut the bread into small cubes. 
  • In a bowl, mix the bread, egg, pumpkin, milk and cinnamon together. 
  • Add the bread cubes, chopped walnuts and banana into a bowl and stir until the bread cubes are evenly coated. 
  • Spray a small bowl or large ramekin with cooking spray and transfer the bread mixture into it. 
  • Cover with aluminum foil and bake for 30 min. (I used my Cuisinart convection toaster oven and this temp/time worked perfectly).
