P28 Mixed Berry Stuffed French Toast

Compared to IHOP Stuffed French Toast with Berries:

  • Fat - 36g
  • Carbs - 152g
  • Protein - 16g

Ingredients:

  • 4 slices of P28 Bread
  • 2 whole eggs
  • 1/3 cup egg whites
  • 1 cup Almond Milk
  • 1 Scoop Cinnamon Roll protein
  • 4 tsp Cinnamon ( Spice to taste)
  • 1/3 tsp nutmeg (Spice to taste)
  • 1/2 tbsp VPX Thin Fat (or substitute ½ tbsp of coconut oil)
  • 4 tbsp Fat Free Cream cheese

Berry filling and topping Ingredients:

  • 1 bag frozen mixed berries
  • 4 drops liquid stevia
  • 1/3 cup water

Directions:

First you must make the Berry Filling since it takes the longest to cook approx 15-20mins

  • Place a small pot on the stove at medium heat and let it heat for a few minutes.
  • Add 1 whole bag of frozen mixed berries to the warm pot.
  • Stir occasionally so the berries don’t stick to the bottom of the pan and burn.
  • After the berries have gotten soft add 1/3 cup water. You can add more or less depending on thickness preference.
  • Stir the berries and lightly mash them with a fork to break them apart.
  • Add 4 drops of Stevia.
  • After the berries have cooked lower the heat to the lowest setting to keep them warm while you prepare the French toast.

French Toast Directions

First make the mixture in a large mixing bowl

  • Add 1 cup of almond mix
  • Add 2 whole eggs
  • Add 1/3 cup egg whites
  • Add 1 scoop of cinnamon roll protein powder
  • Whisk the mixture until it is smooth and consistent.
  • Add 1 tbs coconut oil , this will help make the mixture smooth and provides good fats.
  • Add 4 tsp Cinnamon – Spice to taste
  • Add 1/3 tsp Nutmeg
  • Whisk the mixture until all ingredients are well blended.

Prepare the bread

  • Pre-heat a frying pan or electric griddle to medium heat.
  • Take 4 slices of P28 bread and spread the cream cheese on each slice.
  • Cut each slice in half
  • On one half place some of the berry filling. Do not put too much or it will spill everywhere when you dip it in the mixture.
  • Place the other half on top and dip in the mixture. Make sure you dip both sides evenly.
  • After dipping quickly place it on non-stick frying pan or use a griddle which is my preferred method.
  • Repeat the process until you get all slices.
  • Wait a couple of minutes depending on the stove top and look under one of the slices with a spatula. If it looks golden brown you can flip it to cook the other side.
  • After both sides are golden brown the toast is ready.
  • Place onto a plate and take the remainder of the berry topping and pour over top.
  • Top off with whip cream. Optional.
