P28 Peanut Butter Buckeyes

Serving size: 1/12 of a recipe (2.9 ounces)



  • 16 tbs. of P28 Peanut Butter
  • 2 cups Splenda
  • 1 tbs. Butter
  • 1 tbs. Water
  • 4 pieces of Bakers Unsweetened Baking Chocolate Bar
  • 3 drops of Vanilla Stevia

Confectionary Sugar

  • Add 2 cups of Splenda into a food processor
  • Process on high for several minutes until it is in powder form


  • Melt 1 tbs of butter in microwave
  • Combine the peanut butter, confectionary Splenda, butter, and 1 tbs water in a mixing bowl
  • Take 1 tbs of mixture and roll into a ball with your hands
  • Place ball on a baking sheet lined with wax paper
  • Repeat process until all batter is done
  • If batter is too dry to roll into a ball simply wet your fingers under running cold water and roll mixture
  • Once all batter is used and rolled into balls place in the refrigerator while you melt the chocolate
  • Melt 4 pieces of unsweetened baking chocolate using a small bowl over lightly boiling water
  • Add three drops of vanilla Stevia to the melted mixture
  • Once melted take Peanut Butter balls out of the refrigerator and poke with a toothpick
  • Take toothpick and dip the peanut butter balls in the melted chocolate
  • Once dipped in chocolate place the peanut butter balls back on the baking tray lined with wax paper and freeze until chocolate is set.
