Ingredients
8 Slices of P28 Bread
60 mL (1/4 cup) Butter
60 mL (1/4 cup) Flour
500 mL (2 cups) Milk
16 Asparagus Stalks, Blanched
150 g Smoked Salmon
8 Slices of Swiss Cheese
4 Eggs
Directions
To make the Béchamel, place a pot on the stovetop at medium/low heat. Cook the butter with the flour while stirring for 3-4 minutes.
Slowly add milk while stirring with a whisk, then lower heat and cook for 15 minutes, stirring occasionally. Season to taste and let cool slightly.
On a clean workspace, spread the béchamel on all 8 slices of bread. Add the asparagus and smoked salmon, followed by a slice of cheese. Add another slice of bread, and repeat to create two distinct layers.
Place the 4 Croque Madams on a baking sheet covered with parchment paper, and bake on the center rack for 6 minutes.
While the sandwiches are baking, fry the eggs sunny side up. Carefully top each sandwich with an egg, and serve.
