Ingredients
1 P28 Flatbread
4 Large Strawberries
1/4 Cup Raspberries
1/4 Cup Blueberries
1/4 tsp. Orange Zest
1 Tbsp. Juice From Orange
3oz 0% Greek Yogurt
1 Scoop Vanilla Protein
1/2 tsp. Vanilla Extract
3-4 Tbsp. Water
2-3 Drops Almond Extract (optional)
Directions
Cut P28 flatbread into 3″ squares and place them on a cookie sheet. Only use 2/3 of one flatbread, which will give you 3 squares for each napoleon.
Broil flatbread for 2-3 minutes, flip and broil for another 1-2 minutes until edges are golden brown and crispy. Keep your eye on the over - do not leave flatbread in oven for too long.
Set aside and let cool completely.
Combine Greek yogurt, protein powder, orange zest, and both extracts in a small bowl. Slowly add water and mix until you have a nice thick consistency similar to pudding. Set aside.
Chop strawberries into quarters and slice raspberries in half. Toss fruit in reserved orange juice.
Begin to layer napoleon starting with a piece of toasted flatbread, protein mixture, and then berries. Repeat until you have 3-4 layers. Top with a little sprinkle of powdered sugar and/or sliced almonds.
