Mini Apple Pie Pizzas

Ingredients
1 P28 Flatbread
1 1/2 Tbsp. Sweet It Vita Fiber Syrup
2 fl. oz. Fage 0% Plain Greek Yogurt
1/2 Scoop Trutein Cinnabun Protein
2 Tbsp. Water
1 tsp. Coconut Oil
1 Medium Apple, Finely Chopped
3 tsp. Cinnamon
1/2 tsp. Apple Pie Spice
1 tsp. Fresh Lemon Juice
1/4 Cup Unsweetened Apple Sauce
20 drops English Toffee Sweet Leaf Stevia
2 Tbsp. Smucker’s Sugar Free Caramel
4 Walnut Halves
Directions
- Preheat oven to 375.
- Prepare cream topping: combine Greek Yogurt, Trutein Protein, 10 drops of English Toffee Sweet Leaf Stevia, and 2 tbsp of water in a small bowl. Mix until smooth. If you need more water, add slowly until a nice thick pudding is created.
- Prepare apple pie topping: combine coconut oil, chopped apples, cinnamon, apple pie spice, vanilla, lemon juice, 1 tbsp Sweet It VitaFiber syrup, 10 drops English Toffee Sweet Leaf Stevia in a small saucepan. Cook 5 minutes. Add applesauce and cook and additional 3-5 minutes until apples are tender.
- Cut 4 even circles from 1 P28 flatbread using a large cookie cutter (or simply just cut 4 rectangles out to avoid any waste). Brush with 1 tablespoon Sweet It Vita Fiber Syrup and sprinkle with 1-2 tsp cinnamon. Bake for 5 minutes per side. Remove from heat.
- Top “pizzas” with Greek yogurt/protein mixture, then add apple mixture. Drizzle with caramel sauce and sprinkle with chopped walnuts.
